Quinoa, Spinach, Kale & Blue Majik Bites

 

This recipe is so good and everyone loves it!

Serves: 3 - 4 (... depending on if you use them as appetizers or as part of a main course... you might want to triple the recipe and freeze what you don't eat right away)

Prep Time: 15 minutes

Ingredients:

  • 1-2 cups frozen spinach
    1 bunch of kale, chopped into small pieces
    2 cups cooked quinoa
    1/2 cup cheese (I used a dairy free cheese)
    1 onion diced
    3 eggs beaten
    Spices to taste (I just used black pepper)
    1/2 tsp. Blue Majik powder

 

Directions:

Preheat oven to 425 degrees. Sautee onion, spinach and kale until onions are translucent and spinach and kale are wilted. Mix green veggie mixture with all other ingredients. Roll into balls and place on cookie sheet lined with parchment paper or sprayed with cooking spray. Bake in oven for 30 minutes.  Serve over greens or brown rice noodles or eat as appetizers.

Variation: For the 2 cups cooked quinoa, try it with the same amount of millet, amaranth, couscous, or small grain brown rice. Grated carrots also add wonderful color to this recipe.
